Tropical Papaya Breakfast Bowl

This morning I made myself a healthy, fresh, and tropical breakfast bowl. Every bite had me feeling like I was laying on the sandy beaches of Mexico. Even the vibrant, warm colors of the papaya reminded me of a blazing sunset. This got me to thinking; I need want to go on vacation. These are pictures from our last trip to Mexico

Here is my recipe:
1/2 Papaya – seeded.
1/2 cup Plain Greek Yogurt
Handful of Blueberries
1 tbsp. Coconut Shavings
1/2 cup Toasted Coconut Granola from trader Joes
1 tbsp. Honey
1 tbsp. Chia Seeds
Dash of Cinnamon

If you aren’t a fan of papaya, use a pineapple for your bowl instead. Papayas are rich in antioxidants, fiber, and aid in digestion. I like mine when their skin is tender and you can see lots of yellow with specks of green. Next time you waking up wishing you were on vacation, make this breakfast bowl! It’s quick, easy, healthy & fresh!
